All our meat comes from halal-certified suppliers. Every chicken cube, every kebab, every dish — sourced from approved halal-certified meat suppliers, supplier certificates available on request. Kitchen-level HMC/HFA certification is in process — once issued we'll publish the certificate number, certifier name, and expiry on our halal page. We will never bury this — halal is a confidence claim for us, not a footnote.
Every cooked dish is made without nut ingredients under our nut-control kitchen process — covering curries, Royal Chicken Biryani, jeera basmati rice, Chicken Tikka, Chicken Seekh Kebab, and samosas. No cashews, pistachios, almonds, peanuts, pine nuts, or chopped-nut garnish in any in-kitchen dish. Shahi Paneer is finished with cream and saffron (not cashew). Biryani uses fried onion + herbs (not chopped nuts).
Important — cross-contamination risk disclosure: we operate a small Brighton kitchen at 1 Paston Place where dishes are prepared in a shared environment. While we don't add any nut ingredients to cooked dishes, we cannot fully eliminate the risk of trace cross-contact (shared utensils, surfaces, air space). Yes. Amritsari Chole is fully vegan and gluten-free. Shahi Paneer is vegetarian, gluten-free, and nut-free. More plant-based dishes will be added as the menu expands.
Sella 1121 long-grain parboiled basmati. The grains are tri-color natural mix (saffron-yellow + saffron-orange + pearl-white) and hold their shape and flavour through the delivery journey. Short-grain rice gets soggy in delivery — Sella doesn't.
The brand philosophy is that great Indian food's flavour comes from spice technique, slow-cook reduction, and ingredient quality — not from butter, ghee, or oil pools. Gravies look glossy from reduction, not fat. Cream swirls in moderation are kept (cream isn't oil), but no golden butter pools or oil glints.
